We went to Clink78 hostel in London and made the Tomato, Mozzarella and Pesto pizza for some fellow backpackers, here’s what happened…

    This is a recipe that adapts well to almost any hostel and ingredient circumstance.
    Makes 2 servings
    ½ kg mushrooms sliced (or spinach)
    ½ a medium onion chopped
    2 garlic cloves chopped
    1 tablespoon fresh parsley or cilantro (or ½ tablespoon dry oregano)
    ½ tablespoon olive oil or canola oil
    250 grams any cheese that melts shredded or sliced
    8 flour or corn tortillas (if you can´t find these ingredients you can use pita bread or make a sandwich instead of a quesadilla with regular bread!)
    Salt and pepper to taste.
    Heat the oil over medium heat , add the onion and let it cook around five minutes until it softens. Add the mushrooms, the garlic and a little bit of salt and pepper. Stir until the mushrooms start to release some of the water, approximately 3 minutes. Let it cook for another 10 minutes until most of the water evaporates, add the parsley and let it cook for two minutes more.
    Heat the tortillas and stuff with some cheese and some of the mushroom mixture while is still hot.

    Hungarian chicken stew for 2 persons

    – 1 big onion
    – 2-3 cloves of garlic
    – 4-6 chicken drumsticks
    – 1 big tomato
    – oil, salt, black pepper, paprika (red pepper)

    1 Wash the drumsticks.
    2 Chop the onion
    3 Heat oil (2-3 tablespoons) in a pot
    4 Add onion and fry until glassy
    5 Take it off the heat and add paprika and meat and stir.
    6. Add the chopped tomato, garlic and salt to taste.
    7 Cover and steam for approximately one hour.
    8 Serve with rice/noodles/dumplings/pasta

    Dessicated coconut – 1 cup
    Condensed milk – for mixing
    Powdered cardamom – pinch
    Nuts(crushed) – 2tbs
    Mix3/4 cup of the coconut with condensed milk.
    Add all other ingredients.
    Mix well and make small balls(ladoo).Roll these ladoos in the left over coconut.
    Serve it as dessert.

    Baked Cheese Penne (Firinda Peynirli Kalem Makarna)

    1 package Penne ~1lb
    3 eggs
    1 cup ricotta/ feta cheese
    … … … 1 cup mozzarella, shredded
    1 cup milk
    ½ tsp black pepper
    ½ tsp thyme
    ½ tsp crushed red pepper (optional)
    ½ cup fresh parsley, finely chopped (optional)
    1 tsp salt to taste

    Cook Penne in salty water according to the instructions on the package (for about 8-10 minutes). Wash under cold water and drain.
    Beat eggs in a large bowl. Leave ½ cup of shredded mozzarella for top and mix the rest of the ingredients with the eggs. Gently stir this mixture in cooked Penne. Take it over a greased Pyrex or oven tray. Sprinkle with the remaining shredded mozzarella. Preheat the oven to 400 F (200 C) and bake for about 30-40 minutes or until it turns lightly brown.
    Serve hot/warm.

  14. simplest recipe ever but very tasty.

    tomato tuna pasta

    fry some onions & mushrooms
    cook enough pasta for the amount of people eating
    add 1 can of tomato soup per person
    add 1 can of tuna per person
    season with garlic powder, a sprinkle of chile powder & pepper.
    combine & enjoy.

    2 cups Simolina
    2 cups cocounuts
    I cup sugar
    2 cups jogurt
    2 baking powder bags
    Grease the tray with Tehina or Butter and pour the mixure above in the tray.
    Bake in oven on 180c for about 45 minutes (or till surface is gold) and
    leave till it’s cold.

    Sugar Syrup:
    2 cups sugar.
    1 cup water
    1 Geranyum flower
    few drops of a squeezed half lemon

    Boil all together till thick ,take out the Geranyum flower and pour the
    hot syrop on the baked cold Hareese.

    Bon apetite

  16. 1322 Infamous Chodka (thanks Moni!) with Pancakes (works well on a cold evening)

    1/2 bottle Smirnhoff Vodka (drink the other half while preparing..)

    2 large slabs Cadbury Milk chocolate – break in pieces and add into bottle

    (make sure bottle cap is back on)

    Place bottle of Chodka in container filling the container with boiling water until the chocolate is melted – pour in shot glasses and serve with

    Pancakes (learned this from Tom & Mattijs our Dutch guests)

    500ml flour

    10ml baking powder

    pinch of salt


    1 egg

    mix above until a smooth mixture

    Have any filling of your choice (bacon bits, grated apple, cheese, raisins, banana, etc)

    Pour mixture in pan, just before turning pancake place one of the fillings on top, turn bake till done

    Try spreading caramel (in tin) over a banana pancae 🙂

  17. Heres the recipe from Envoy Hostel team – we had 3 recipes on our blog (http://envoyhostel.com/hostel/blog_post.php?blog_id=114) and got our FB friends to vote for the best… this is the winning recipe:

    Potato Frittata

    1 Potato
    1 Sausage
    2 Eggs
    Any vegetable of choice (eg broccoli/ zucchini etc)
    Seasoning: Salt/ pepper/ mixed spices/ garlic clove

    Peel and dice the potatoes. To speed up the process, cook the potatoes in a microwave till just cooked but not too soft.

    In a deep pan, add some cooking oil and some chopped garlic and fry slightly. Chop the sausages and add to the pan to fry lightly. Chop and add the vegetables to your pan.

    Add the potatoes and cook again till a little golden.

    Break the eggs on top and season to taste with the salt/ pepper/ mixed spices.

  18. Yum yum. Apparently the Italians think it very uncouth to serve fish and cheese together, so not putting parmesan in the risotto is probably technically correct!

    Aw, this was a really nice post. http://blog.hostelbookers.com is really good. In idea I would like to put in writing like this additionally – taking time and actual effort to make a very good article… but what can I say… I procrastinate alot and by no means seem to get something done.

    Wah! Wah! Quit cryin’ and make good use of the bike paths in summer, the skating in winter, and stop making up stuff about salt on the roads and lack of English- speaking jobs.

    Hot custard and fruit is hostel kitchen friendly for vegan travelers like me (e.g., custard powder + soy milk + a can of apples or peaches + 5 minutes). The soy milk means it has some protein.
